KITCHEN MISADVENTURE SERIES – SINIGANG NA ULO NG SALMON

This is our lunch today - another favorite comfort food that is just right for a rainy day... Before we used to cook another fish for sinigang - the maya-maya but the fish earned a bad rap ever since its fakes (called Imelda) allegedly proliferated the Pasig river, thus, many were hesitant to buy and cook maya-maya anymore for hygiene/health reasons (me included). And since we already discovered that salmon is another good fish to cook sinigang, we never looked back and had been cooking that ever since. First, you clean the fish head thoroughly then saute ginger, garlic, onions, and tomatoes. Add the fish and cook well. You may add salt or patis, whichever you prefer before adding the miso then the water. When the sinigang boils, you may add the vegetables, mustasa or kangkong, then the sinigang mix. Let the sinigang boil for a bit more then turn off the heat and serve the soup while still hot and steaming!
