KITCHEN MISADVENTURES 47: Disastrous corn maja



I know, I know I have made this dessert countless times before which is why I just don’t understand at all what I did wrong again this time. If you look at the picture on the left closely, the maja seems a bit watery, and indeed it was! I thought it was just like that at first and would later on harden as it stays longer in the ref but lo and behold even if I let it stay in the fridge overnight it still won’t harden!!! Maybe it’s in the milk I added to make up for the coconut milk that I lacked. I doubled the ingredients this time since every time I make this, I always make too little with just a half-inch of maja made. And so I tried to double the recipe but the results turned out disastrous. To fix it, I decided to reheat the entire thing and added more cornstarch and also some gelatin just so it would harden and be solid enough to eat. Well, it still tasted good even if it did not look so good. At the right is a picture of the ‘fixed’ maja. It looked fine at the outside (I used green gelatin, well, it’s the only one I have left) but actually it was still a bit soft and gooey, and a bit too sweet! So next time I guess I’d stay away from using any kind of milk and just stick to coconut milk.
