Today, I tried to salvage the crispy pata that I cooked yesterday. It was still crispy but the inside was a bit dry and tough so I guess I needed to put in some sauce to make it a bit juicier, hence, the decision to make it into paksiw na pata. Besides, there was just a little left of the pata so I figured adding in some sauce would extend its life a bit further and feed all four of us better than if it were just plain crispy pata. I used the recipe from Connie so just check out the full recipe at her blogsite Casa Veneracion. The only difference is that I was unable to find any banana blossoms in our nearby talipapa so I made do without it. Also, I didn’t have oregano so I just placed star anise to make it a bit like pata tim and it turned out quite well.
