KITCHEN MISADVENTURES 55 – Rocky road dessert



During weekends when we are at home, I try to do something special for the kids – maybe a baked goodie or anything sweet. This time I found something very easy to make from Casa Veneracion and since I had all of the ingredients in the pantry, I just went ahead and did it! This recipe for Rocky Road only called for some chocolate (I had some leftovers from Christmas giveaways), heavy cream (which I don’t really have but I just substituted all purpose cream) some mini marshmallows and nuts.
First, you melt the chocolate that had been roughly chopped into small pieces. Sassy recommended using a microwave oven but you can also use the double boiler if you don’t have a microwave. Then you add in the cream and mix until the chocolate melts completely. After that, you just fold in the marshmallows and nuts, pour into a prepared pan (lined with baking paper) and chill for several hours. My daughter even decorated the top with candy sprinkles before we popped it in the fridge (that’s her hand in the picture). We did this after we ate lunch and ate it as a dessert during dinner - truly delish and so easy to make too! Just the perfect ending for our grilled liempo and chopsuey dinner.
