This morning, I opted to cook hotdogs in an unconventional way because I have gotten tired with the usual fried hotdogs with eggs on the side. Instead, I decided to combine the two to make a fritata. I actually got the recipe from Dennis’ Lutong Bahay blog. First, I fried the hotdogs (any kind) sliced thinly in a non-stick pan in a little olive oil. Then I fried the potatoes, also sliced thinly (like potato chips) on a single layer at the bottom of the pan. Then, once cooked through, I laid a second layer of thinly sliced tomatoes. After that the cooked hotdogs and then spices and seasonings like dried basil, salt and pepper were scattered all over the frittata. Finally, I poured beaten eggs (about three of four depending on the size of your pan) on top of the mixture. I just made sure that every nook and cranny is filled with it. Then, I lowered the heat and allowed the eggs to set. Once set, I inverted the frittata onto a plate by turning the pan over and returned it to the pan to cook the other side. I waited a few more minutes until the frittata is done! Then I served it for breakfast with catsup and/or mayonnaise.
