KITCHEN MISADVENTURE SERIES – BAKED MACARONI (Fave comfort food)
For our weekend snack time, I decided to cook another favorite comfort food - baked macaroni! This dish is actually just easy to make, but just requires pre-cooking three items separately- the macaroni noodles that must be boiled, the red meat sauce which seems pretty much like your basic spaghetti sauce, and finally the cheese sauce. When all these have been prepared and cooked already, all that is needed is to assemble them all together. First you mix the macaroni and red sauce together, top with a layer of cheese sauce, then add another macaroni with red sauce and lastly top with more cheese sauce. Pop the baking pan in the oven and when the cheese top turns slightly browned...it's finished!
P.S. I admit this time around the cheese sauce that I made was a tad too salty, I guess I shouldn't have added more salt since the Kremqueso I used was salty na pala...my mistake! Next time I will not add too much salt na lang.

KITCHEN MISADVENTURE SERIES 63 - POTATO SALAD AND BAKED MAC
To make up for the disastrous lunch I made earlier, I decided to cook an old-time fave of the family and one which I am sure they felt wanting more of during Kit's graduation celebration two days ago - baked macaroni. I remember cooking a kilo and a half of baked mac but everything just blew up in smoke and I am quite sure, they weren't quite satisfied then. So I made some more today for our dinner. The recipe I used was one I got from CASA Veneracion (get the recipe from her site, my apologies because I don't know how to link)and I promise you, you won’t be disappointed because this baked mac recipe of hers has been a perennial hit.
I paired the baked mac with store bought lechon manok and potato salad. It was basically just some pearl potatoes which was boiled in salted water then tossed with carrots, white onions, canned tuna (oil removed) , boiled quails eggs, pineapple chunks, bits of cheese and smothered in mayo-cream dressing and served on top of a bed of lettuce.

KITCHEN MISADVENTURE SERIES 13 - BAKED MACARONI
This is one dish that I have done countless times before in different versions but I believe that this version that I got from my favourite food blogger, Connie Veneracion is the best that I have tasted so far. In fact, way back in 2000 while I was still pregnant with my daughter, I remember I used to always be craving for baked mac but at the time, we simply did the quickie version with cooked macaroni smothered in spaghetti sauce then topped with shredded quick melt cheese then baked in a microwave oven until the cheese melts...that easy! But this recipe is a bit more complicated than that with a whole lot more ingredients to make the cheese all goooey and just simply delish!
