KITCHEN MISADVENTURES – Pork sinarabsab
This is another dish that I got from Dennis Lutong Bahay blog…it is believed to be an Ilocano version of the well-loved Inihaw na Liempo. The main difference is that instead of marinating the pork in the usual mixture of vinegar and soy sauce, one uses the tamarind mix, yup the kind commonly used for sinigang. I mixed it with the pork together with brown sugar and salt. I marinated the mixture overnight but if you don’t have the luxury of time, you can do it even for just a few hours. Then, the next day instead of grilling the pork, I just fried it like your regular lechon kawali and voila! Another delicious baon for the kids…
