KITCHEN MISADVENTURE SERIES – Pork spareribs in honey mustard sauce
This is another good recipe from CASA Veneracion…good for two reasons because (one) it allowed me to cook while exercising and (two) because the end result was so totally unexpected! But I am getting way ahead of myself…this dish is so easy to do. For starters, I let the spare ribs thaw while inside the fridge by taking it out of the freezer last night and putting it below near the vegetable crisper. Then, this morning when I awoke I took it out of the ref completely and let it thaw on the kitchen counter. In a non-stick pan, I laid out the pieces of spare ribs in a single layer and let it stew until the meat starts to render fat. When the meat has browned considerably on both sides, I poured in about a cup of water and the honey-mustard mixture.
Well, to tell you the truth, I got this recipe from Connie’s blog but my problem was that I did not have any mustard on hand. Instead, what I had was the prepared salad mix sachet from Clara Ole and so this is what I used to boil the pork spare ribs with a dash of salt and pepper. I let the pork simmer for thirty minutes while I biked/exercised then when the liquid had been reduced, I let it simmer a bit more until it had all but dried up. Then, I packed a few in the kids’ lunchboxes and the others went to the breakfast table for the others’. What is surprising though is that not just the kids like it (they say it tastes sweet like ham) but the hubby (who’s quite a finicky eater) seemed to like it also since I reserved some for him for our lunch…yippee!
