Here’s another simple dish for my kids’ baon today – a Filipino classic – the Lechon Kawali (the recipe I got from Dennis’ Lutong Bahay blog):
1/2 kilo Pork Liempo
4 stalks tanglad (white portion only)
2 pcs. dried laurel leaves
1 large onion
1 head garlic
1 tsp. pepper corn
1/2 cup rock salt
cooking oil for frying
Just mix all the ingredients together (except the oil) and let boil with enough water until the meat becomes tender. When the meat is tender, let cool and place in the freezer. The next day, deep-fry the liempo in oil. Use a wok with cover so that the oil would not splatter too much. Place the fried meat on a wire rack and let cool before putting in the kids’ lunch boxes.
